Serves 10 servings
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
To make the Drink (produces 850ml, to serve 10)
400ml decent vodka
100ml London dry gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
A few cranberries, as a garnish
Mandarin essential oil, for finishing
Directions
Making the Citrus Syrup: Put all the ingredients in a pot, heat until it reaches a light boil, mixing until the sugar dissolves. After that, turn off the burner and leave to cool down fully. Pour into a sealable bottle, close it and refrigerate it in the refrigerator, where it will keep for around four weeks.
For the Cocktail Base: Combine all the spirits and syrup in a large bottle, let it rest for 60 minutes, then filter it preferably using muslin, so it's perfectly clear.
To serve: Measure 85ml of the cocktail base into a mixing glass packed with ice, gently stirring lightly for a minute to cool it down. Pour into a cold coupe glass or equivalent, garnish with the cranberries and complete it using a quick spritz with the mandarin essence over the drink.
